Make sure you have all your customers names, addresses, phone numbers, email addresses, account information, payment information, order history, wish list items, etc. This is probably the most important thing to save. Without this, you could easily loose most of your business.
After you have copied and pasted, double check everything.
Then, should the worst happen, you can give all these Word docs to a new web designer and he can easily re-create your website for you.
